How do I get delivery requirements stats, like on your servers, when I play and offline game? Like so that I can see how much of each type of cargo is needed and delivered to the city.

We use them and there's several GS's available for download .

The settings, requirements and ingame behavior are defined by the GS and are available on the Configure option when selecting the desired GS. If you want to explore it, extract the files on the GS to get the *.nut's. Can be edited with a normal txt editor. API for available functions is here .
