Thanks for your efforts searching for the settings, but currently:
OpenTTD settings are override by xShunter (server controller) definitions and, currently, companies are only reset when a slot is needed and a company is clean by this order: empty without vehicles, empty with lower CV. Taken out this exceptions, companies aren't reset at any point.

Edit: command is !resetinfo
